This type of argument is very popular among YEC's and their ministries. All Christians love these arguments, including us old earth creationists. They testify to the marvel and creativity of our God. The argument goes like this...this is a wonderful feature of nature (usually refers to some animal's attribute), so that means that "God must have created it."
"God of the Gaps" refers to the idea that there are gaps in the understanding of mankind. If we cannot explain something in the natural world, then YEC's attribute its existance to God, despite the fact that there is no evidence to support their claim. This type of argument is not arguing from scientific facts, but from a lack of facts. Scientists don't know how something works...so God must have done it!
Another term for it is an "argument from ignorance."
God of the gaps arguments are of questionable use in evangelism. They may impress people who are not scientifically trained, but when dealing with knowledgeable people who deal in scientific facts, this type of argument is pointless.
